Nicholls State University Community Nutrition Students conducted a cooking demonstration at the Thibodaux Food Bank on Oct. 23, 2009.
The focus of the demonstration was the nutritional value of fruit and vegetables. The participants were given a short pre-test prior to the demonstration and a post test after the demonstration to test the knowledge gained.
The students prepared a vegetable soup and a microwave desert of peach cobbler. All ingredients used were items regularly given to food bank clients. All participants were provided recipes, a brochure containing tips on using fruit and vegetables, and the ingredients to prepare the dishes demonstrated.
